Leftovers = Take Out Tuesday

It's Tuesday and I have many leftovers from blah dinners and even more blah lunch attempts. 

So I have decided to come up with something for my leftovers - to dedicate a special day to them.  They deserve it.  They've been holding court in the fridge for at least one day fighting and vying for any door holders attention.  I see them, that fridge light pops on and the bowls full of food light up with hope!

Well hope no more and welcome to Take-Out Tuesday.

Today in my fridge we have leftover: Two pieces of Tilapia, mashed potatoes, seasoned potatoes, uncooked turkey breast, peas and carrots/mixed vegetables.  Some crescent rolls that we never cooked.


The Tilapia is a lost cause - I will have that with some lettuce later on.  But the other ingredients......hee hee hee - "Turkey A La Ding" it is.


I looked around in my kitchen cabinets to see what I could use to make my Turkey A La Ding - I do have whipping cream but I am saving that for some actual whipped cream.  I settled on some Cream of Mushroom Soup and shallots to go along with my turkey cutlets and leftover veggies to start my Ding.


First, I didn't want my turkey cutlets to be dry so I baked them after covering them with mayo at 350 for about 15 minutes.  Then I chopped those birds up. 



I added my chopped shallots with some I Can't Believe It's Not Butter (all I had) to the skillet to soften them up.  


In went the baked turkey cutlets.  I noticed that I really didn't have a lot of turkey meat for this to be a full on dinner so I added my trusty frozen Tyson Grilled chicken strips to the mix to bolster the amount of meat along with some chicken broth. 
Next went in that trusty Campbell's cream of mushroom soup - two cans.  I added more chicken broth to thin it out a bit then realized that I still had veggies to add so I may need another can of soup.  These are 10 oz cans by the way. 
Now I don't eat a lot of salt, most of my food is almost bland - I like it that way but cream of mushroom soup has enough salt in my opinion for the entire dish and the Tyson grilled chicken strips are also seasoned.  Therefore the only seasoning I added was Mrs. Dash Herb and Garlic blend for a little kick.

I let that cook for a minute or two and then added my veggies.  They are already cooked so I wanted to add them at the very last possible minute.
The veggies are really happy to join the pot!  I kicked that around, tasted it and realized it needed a kick - I added what little bit of sour cream we had to it and voila!  Turkey A La Ding - dinner is cooked and ready to eat.
Since we have leftover mashed potatoes, this Ding will be served over that with some crescent rolls on the side.  But I will note, this is the PERFECT filling for Turkey A La Ding Pot Pie.

I should get me some Mushroom soup, you can use that to make just about everything.
